In the morning, we will head towards Neusa Reservoir, a tranquil natural haven located just an hour from Zipaquirá. Upon arrival, we’ll begin with a visit to a local organic garden and farm, where you’ll learn about the cultivation of traditional Colombian ingredients and their importance in regional cuisine.
Next, we’ll take part in a Colombian‑style cooking class led by a local chef. You’ll discover how to marinate and cook meat using time‑honoured regional methods and fresh, locally sourced ingredients. A highlight of the experience is preparing Lomo al Trapo, or “beef tenderloin in a towel”, a rustic Colombian classic in which the meat is wrapped in a thick salt crust and cloth, then cooked over open flames. The class concludes with a delicious open‑air lunch overlooking the serene landscape of the reservoir.
After lunch, we’ll continue to the renowned Salt Cathedral of Zipaquirá, one of Colombia’s most extraordinary architectural achievements. Entirely carved inside a former salt mine 180 metres underground, this monumental church is a masterpiece of engineering, artistry, and devotion. As you walk through its dimly lit tunnels, you’ll encounter the Stations of the Cross sculpted in salt, vast chambers illuminated by ethereal blue light, and the breathtaking central nave crowned by a towering illuminated cross. More than a religious site, the Salt Cathedral is a powerful symbol of Colombia’s cultural heritage, an awe‑inspiring space where geology, spirituality, and human creativity come together in a truly unforgettable way.
